Lemon mint marinade for chicken breasts

Ingredients

QuantityIngredient
¼cupDry white wine (non alcoholic works too)
cupFresh lemon juice
2tablespoonsGrated lemon zest
½cupOlive oil
¼cupChopped fresh mint
3tablespoonsChopped shallots
1tablespoonFresh rosemary
1teaspoonDried oregano
Kosher salt and fresh ground pepper to taste

Directions

Combine the wine, lemon juice, and zest in a non reactive bowl. Whisk in the olive oil a little bit at a time. Add the mint, shallots, rosemary, oregano, and salt and pepper. This makes about 2 cups of marinade.
