Lemon mint butter

Measure Ingredient
1 cup Softened butter
1 teaspoon Grated lemon peel
2 tablespoons Chopped fresh mint leaves

Beat butter with lemon peel and mint leaves. Serve with banana nut bread or similar cakes. Yield: 1 cup.
