|¾ cup||Caster sugar|
|1 tablespoon||Self-raising flour|
|Zest and juice of 2 lemons|
|¼ cup||Caster sugar; extra|
1. Pre-heat oven to 180deg.C. Grease an ovenproof dish.
2. Beat egg yolks with sugar until pale and creamy. Add milk, flour, zest and juice of lemons and coconut. Beat egg whites with extra sugar until stiff and fold into lemon mixture.
3. Pour into prepared dish and stand in shallow pan of hot water. Bake for about 35 minutes.
