Kitty's crabcakes

Yield: 2 Servings

Measure Ingredient
1 pounds Crab meat -- picked over
1 \N Egg
1 tablespoon (heaping) mayonnaise
1 tablespoon Dry mustard -- (scant coffee
\N \N Spoon)
2 tablespoons Cracker crumbs
⅔ cup Parsley -- chopped
½ teaspoon Salt
\N \N Black pepper

Mix crabmeat, egg, mayonnaise, mustard, pepper and salt. Pat with bread crumbs and parsley. Brown in skillet. Serve hot or cold. Makes 4 patties and left overs are great made into sandwiches.
