Kit anderson's chipotle bbq sauce

Measure Ingredient
½ medium Onion; minced
4 Cloves garlic; minced
1 tablespoon Bacon fat
28 fluid ounce Catsup
8 Chipotles en adobo; minced
2 tablespoons Good chile powder; heaping
2 teaspoons Cumin
2 teaspoons Thyme
6 fluid ounce Amber beer
½ cup Cider vinegar
2 tablespoons Prepared mustard
1 tablespoon Worcestershire
1 tablespoon Nuoc mam
¼ cup Bourbon
½ tablespoon Cocoa
Black pepper; to taste

Saute onions and garlic on med high heat until soft. Add everything else.

Simmer uncovered until thick.
