Ingredients

| 1 | tablespoon | Bacon fat |
| 28 | fluid ounce | Catsup |
| 8 | Chipotles en adobo; minced | |
| 2 | tablespoons | Good chile powder; heaping |
| 2 | teaspoons | Cumin |
| 2 | teaspoons | Thyme |
| 6 | fluid ounce | Amber beer |
| ½ | cup | Cider vinegar |
| 2 | tablespoons | Prepared mustard |
| 1 | tablespoon | Worcestershire |
| 1 | tablespoon | Nuoc mam |
| ¼ | cup | Bourbon |
| ½ | tablespoon | Cocoa |
| Black pepper; to taste | ||
Directions
Saute onions and garlic on med high heat until soft. Add everything else.
Simmer uncovered until thick.
