Measure | Ingredient |

3 \N | Lambs kidneys, cleaned, cored and cubed |
2 \N | Rashers of bacon, chopped (slices) |
5 \N | Tomatoes, chopped |
1 bunch | (small) corriander leaves, chopped |
1 \N | Buch (small) mint leaves, chopped |
6 \N | Cloves garlic, chopped |
1 \N | 1/2-inch piece ginger, chopped |
2 \N | Green chillies, chopped |
1 \N | Onion, minced or very finely chopped |
\N \N | Salt and pepper to taste |
In a little oil fry the onions until they start to brown. Add the remaining ingredients other than the kidney. Fry for 5 minutes then add the kidney, salt and pepper. Cook until done. Serve on either fried or toasted bread.
