Kidney and tomato

Measure Ingredient
3 \N Lambs kidneys, cleaned, cored and cubed
2 \N Rashers of bacon, chopped (slices)
5 \N Tomatoes, chopped
1 bunch (small) corriander leaves, chopped
1 \N Buch (small) mint leaves, chopped
6 \N Cloves garlic, chopped
1 \N 1/2-inch piece ginger, chopped
2 \N Green chillies, chopped
1 \N Onion, minced or very finely chopped
\N \N Salt and pepper to taste

In a little oil fry the onions until they start to brown. Add the remaining ingredients other than the kidney. Fry for 5 minutes then add the kidney, salt and pepper. Cook until done. Serve on either fried or toasted bread.
