Key lime pie filling

Yield: 1 Servings

Measure Ingredient
¾ cup Fresh key lime juice
2½ cup Soymilk
1 cup Sweetener of choice
5 tablespoons Cornstarch
2 teaspoons Lime zest

or use as pudding or in making parfaits.

Whip all ingredients together until smooth. Pour into saucepan and heat over moderate heat, stirring constantly until thick and creamy. Pour into a baked 9"pie crust or serving dishes, and chill until firm. Top as desired (non-fat cool whip; yogurt with vanilla and sweetener to taste; etc.) Per Serving-filling only: calories-140 protein-2 g fat-1g carbohydrates-30g fiber-1g sodium-9g.
