Jay's italian sausage

Yield: 10 Servings

Measure Ingredient
2 \N Garlic cloves
1 tablespoon Sugar
5 tablespoons Salt
3 tablespoons Cayenne pepper
1 teaspoon Sage
1 teaspoon Caraway seeds
1 pint Water, iced
1 tablespoon Coriander
1 tablespoon Fennel seeds, cracked
10 pounds Pork butt
2 teaspoons Pepper
