Jamaican run down stew with tofu

Ingredients

1cupOnions; diced
2cupsFirm tofu; diced
½cup;water
½cupRed bell pepper; diced
½cupCarrots; peeled and grated
2teaspoonsGarlic; minced
½teaspoonSea salt
¼teaspoonBlack pepper
cupRun Down Sauce (see recipe)
1cupChayote squash; diced

Directions

Put all of the ingredients, including the sauce, but not the squash, in a saucepan. Simmer for about 15 minutes. Then add the squash and continue cooking until the vegetables are tender-crisp. Serve over rice.
