African vegetarian stew

Ingredients

2Sweet Potatoes, peeled and cut into chunks
2Zucchini, sliced thick
5Tomatoes, fresh -or-
16ouncesCan Tomatoes
15ouncesCan Garbanzo beans (chick-peas) with liquid
½cupCouscous -or- Bulgar Wheat
¼cupRaisins, dark or golden
1teaspoonGround Coriander
½teaspoonGround Turmeric
½teaspoonGround Cinnamon
½teaspoonGround Ginger
¼teaspoonGround Cumin
3cupsWater

Directions

Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes.

Note: Serve the couscous separately, if desired. Parsnips may be substituted for the kohlrabi.
