Island baked beans

Ingredients

2cansBaked beans; (14 oz)
1canSliced pineapple; (19 oz), drained (reserve juice)
½cupBrown sugar; firmly packed
cupRum or reserved pineapple juice
¼cupFinely chopped onion
1tablespoonInstant coffee granules
1teaspoonDry mustard
6slicesBacon

Directions

in an 11x7 inch baking dish, combine beans, ¼ cup pineapple juice, brown sugar, rum, onion, instant coffee, and mustard. Let stand at room temparature 1 hour. Arrange bacon slices on top of beans and pineapple slices on top of bacon.

Bake, uncovered, at 375 F for 1½ hours.
