Indonesian chicken satay

Yield: 4 servings

Measure Ingredient
1 pounds Chicken breasts skinned and boned
2 larges Garlic cloves
6 tablespoons Penaut butter
3 tablespoons Soy sauce
½ teaspoon Crushed red pepper flakes
3 tablespoons Hot water

1. Light a medium-hot fire in a BBQ grill. Cut the chicken into 1-inch cubes. Mince the garlic. In a medium bowl, whisk together the peanut butter, soy sauce, pepper flakes, garlic and 3 tablespoons hot water until the mixture is blended.

2. Add the chicken to the bowl and stir to coat all pieces thoroughly with the peanut butter mixture. Thread the chicken onto metal or water-soaked bamboo skewers.

3. Grill for 4 minutes. Baste the chicken with any additional sauce, turn the skewers over and grill 4 minutes longer, or until the chicken is nicely browned and white in the center.
