Hot and spicy pumpkin chutney

4cupsCooked pumpkin pulp
cupDark brown sugar
cupMalt vinegar
½cupCoarse-chopped onion
½cupCoarse-chopped raisins
3eachesJalapeno peppers, seeded and chopped
2tablespoonsFine-chopped garlic
2tablespoonsGrated fresh ginger root
1teaspoonSalt

Directions

Place all ingred.'s in large saucepan & bring to a boil. Reduce heat and simmer 45 minutes or until thick. Ladle chutney into hot sterilized half-pint jars leaving ½-inch headspace. Wipe rims clean. Apply lids according to manufacturer's directions and process in boiling water bath for 10 minutes.
