Spicy pear chutney

¾cupLoosely packed light brown sugar
¼cupPeeled and chopped onion
¼cupChopped sweet red pepper
½cupRaisins
1tablespoonChopped garlic
3tablespoonsPeeled and chopped fresh ginger
½teaspoonSalt
½teaspoonCayenne pepper
6Pears, peeled, cored, and sliced 1/4-inch thick

Directions

THANKSGIVING SPECIAL '96 SHOW #TG0096 In a saucepan, bring the vinegar and sugar to a boil. Add all the remaining ingredients except the pears and simmer five minutes. Add the pears and simmer an additional five minutes before removing from the heat. Cool 15 minutes, then transfer to a clean container and refrigerate up to 2 weeks.

Yield: 3 cups
