Honeybaked holiday pasta

8ouncesNoodles--plain or spinach; cooked
6tablespoonsDried cherries or cranberries
2Cloves garlic; minced
3tablespoonsVirgin olive oil
4largesCarrots; peeled;blanched, diagonally sliced
2cupsPeas; blanched
3Fruit zest of oranges; lemons limesÿ-- minced
6tablespoonsPine nuts; browned and drained
½cupParsley; chopped

Directions

Cook pasta following package directions. Drain and return to pan to keep warm. Heat olive oil in medium saute pan. Add garlic and saute over med heat until tender. Add carrots, peas, and ham---saute until warm----add to pasta. Combine parsley, zest and cherries or cranberries in separate bowl.Stir half of parsley mixture into skillet---add pasta and toss.Place pasta on platter and sprinkle remaining zest mix and pine nuts over top.
