Honey-lemon dressing

Yield: 1 servings

Measure Ingredient
2 tablespoons Olive oil
¼ cup Lemon juice
⅓ cup Honey; or to taste
\N \N Up to 1/2
\N \N Salt and pepper to taste

Makes ⅔ cup.

Since the tartness of lemons is hard to predict before juicing, be sure to adjust the amount of honey in this dressing to taste. Use very mild honey, such as clover. Toss with bitter greens and lettuce.

Combine olive oil, lemon juice, honey, salt and pepper in a shaker jar; mix well.
