Homemade summer sausage

Ingredients

QuantityIngredient
2poundsGround chuck
2tablespoonsMorton's quick curing salt
½teaspoonOnion powder
½teaspoonGarlic powder
tablespoonLiquid smoke flavoring
1cupWater
1teaspoonMustard seed
1teaspoonCrushed peppercorns
(optional)

Directions

Mix together with hands. Form into 3 sticks about the side of a half dollar. Wrap in foil an refrigerate for 24 hours. Unwrap and bake in 300 F oven for 1 hour in a shallow pan. Let cool 1 hour. Store in clean foil in refrigerator. Serve with crackers.
