Holiday mint pie

Ingredients

1cupCrushed Keebler Grasshopper Fudge Mint Cookies; (16-18)
3tablespoonsHot water
16-oz graham cracker; (or chocolate) pie crust
1pack(3 oz) cream cheese
cupSugar
¼teaspoonPeppermint extract
1Container; (8 oz) Cool Whip, thawed
6dropsGreen food coloring; (up to 10)

Directions

Mix cookies and hot water. Spoon into crust and gently spread to cover bottom. Beat cream cheese until smooth, gradually beat in sugar, milk, and extract. Fold in whipped topping. Add food coloring. Put dollops of mixture into crust. Smooth top with spatula.

I used a chocolate crust and left out the food coloring. It was a popular pie.
