Combine all ingredients and blend thoroughly. (For variety, remove tarragon and sugar and substitute 1 tsp. each of thyme and marjoram and ½ tsp.

Savory Chinese Turkey Meat Marinade ½ cup soy sauce ¼ cup water 3 Tablespoons oil 3 gloves garlic, crushed ½ tsp. black pepper 2 teaspoons salt 2 teaspoons sugar 1 teaspoon cinnamon ¼ - ½ teaspoon ground cloves 1 tsp. ground ginger (or anise) Mix all ingredients together well and evenly coast surfaces of turkey parts or meats. Marinate at least 4 hours. Yield: 1 cup Marinade for Turkey Breast Cuts and Kabobs ⅓ cup chili sauce 2 Tbsp. lemon juice 1 Tbsp. sugar 2 bay leaves, broken up
Combine all ingredients and spread evenly over white turkey meat cuts.
Marinate at least 4 hours. Yield: ½ cup Lemon Barbecue Marinade
