Heavenly chocolate cake #1

Yield: 16 Servings

Measure Ingredient
1 cup Butter or margarine
2½ cup Sugar
2 Eggs
3 cups Flour
¼ teaspoon Salt
3 tablespoons Cocoa
2 tablespoons Vanilla
2 cups Buttermilk
2 teaspoons Soda (dissolved in milk)
1 Box powdered sugar
½ cup Cocoa
¼ teaspoon Salt
1 teaspoon Vanilla
¾ Stick butter; softened
7 tablespoons Boiling water

ICING

Cream sugar & butter. Add eggs, one at a time & beat well. Add dry ingredients alternately with buttermilk & soda. Add vanilla. Bake in 3 layer pans at 350 until done (this is a large cake!). For icing, mix sugar & cocoa. Add vanilla, water & salt. Stir until smooth. Add butter. Beat 3 minutes & pour over cake. (To make Fresh Coconut Cake, leave out cocoa & substitute 1 teaspoon baking powder for 1 of the teaspoons soda. Add 1 cup fresh coconut to icing.)
