Hanukkah doughnuts

Yield: 1 servings

Measure Ingredient
¼ cup Canola oil
3 cups Sugar
2 Eggs + 1 egg yolk
3½ cup All-purpose flour
¼ cup Cocoa powder
½ teaspoon Salt
1 cup Buttermilk
Canola oil for frying

Directions: In a large bowl, beat together the oil, 1 cup of sugar, eggs and egg yolk with an electric mixer until fluffy. In a separate bowl, combine the flour, cocoa, baking powder, and salt. With a wooden spoon, stir the flour mixture into the oil mixture, alternately with the buttermilk. To fry, heat the canola oil to 340 degrees. Drop the batter by tablespoons into the hot oil and cook in batches until doughnuts are golden in color all over. Drain the doughnuts on a paper towel and roll them in the remaining 2 cups of sugar. Serve hot.
