Ham and broccoli casserole

Ingredients

½poundsBroccoli Pieces; fresh or frozen
1tablespoonWater
1poundsCooked Ham; cut in 1/2\" cubes
½cupOnion; Minced
3cupsCooked Rice
1cupCheddar Cheese; Grated
4Eggs; Beaten
1canCream of chicken soup
¼teaspoonPepper
teaspoonPrepared mustard
6 generous servings.

Directions

1. Place broccoli and water in a 2 quart casserole. Cover.

2. Microwave at high (100%) until tender-crisp, 5 to 6 minutes.

3. In a large bowl combine broccoli, ham, onions, rice and half the cheese.

4. Blend eggs, soup and seasoning. Stir into rice mixture.

5. Turn mixture into a 2 quart casserole.

6. Microwave at medium high (70%) until firm around edge, 10 to 1 2 minutes.

7. Sprinkle with remaining cheese.
