Ham and broccoli casserole

Yield: 6 Servings

Measure Ingredient
½ pounds Broccoli Pieces; fresh or frozen
1 tablespoon Water
1 pounds Cooked Ham; cut in 1/2" cubes
½ cup Onion; Minced
3 cups Cooked Rice
1 cup Cheddar Cheese; Grated
4 Eggs; Beaten
1 can Cream of chicken soup
¼ teaspoon Pepper
1½ teaspoon Prepared mustard
6 generous servings.

1. Place broccoli and water in a 2 quart casserole. Cover.

2. Microwave at high (100%) until tender-crisp, 5 to 6 minutes.

3. In a large bowl combine broccoli, ham, onions, rice and half the cheese.

4. Blend eggs, soup and seasoning. Stir into rice mixture.

5. Turn mixture into a 2 quart casserole.

6. Microwave at medium high (70%) until firm around edge, 10 to 1 2 minutes.

7. Sprinkle with remaining cheese.
