Grouper with salsa verde pepin

Ingredients

| ⅓ | cup | Minced onion |
| 1 | small | Minced green pepper |
| 1 | Clove garlic crushed | |
| ¼ | cup | Wine vinegar |
| 2 | tablespoons | Minced parsley |
| Salt to taste | ||
| Pepper to taste | ||
| 2 | pounds | Grouper fillets |
| Seasoned flour | ||
| ¼ | cup | Clarified butter |
Directions
Saute onion, green pepper and garlic in ¼ cup olive oil over high heat.
Stir in vinegar, parsley, salt and pepper. Keep sauce warm while you cook fish. Dredge 2 pounds grouper fillets in seasoned flour. Saute in ¼ c clarified butter at high heat for 3 minutes each side. Pour sauce over fillets and serve.
