Spiced grouper

Ingredients

½cupOnions; chopped
1Clove garlic; minced
46-ounce grouper fillets
½cupDry white wine or vegetable stock
1tablespoonParsley; chopped
½teaspoonBasil; or 2 tsp. fresh, chopped
½teaspoonCayenne pepper
teaspoonHot red pepper sauce
1cupTomatoes; peeled, seeded and chopped
1Lemon; cut into wedges

Directions

Prep: 5 min, Cook: 20 min.

Heat oil in a heavy nonstick skillet over medium heat. Saut‚ onions and garlic 3-4 minutes or until onion softens. Add fish and saut‚ about 1 minute per side. Add remaining ingredients, except lemon. Season with salt and pepper to taste. Cover and simmer 7-8 minutes or until fish flakes easily. Serve fish with lemon wedges.
