|1 tablespoon||Olive oil|
|½ cup||Onions; chopped|
|1 \N||Clove garlic; minced|
|4 \N||6-ounce grouper fillets|
|½ cup||Dry white wine or vegetable stock|
|1 tablespoon||Parsley; chopped|
|½ teaspoon||Basil; or 2 tsp. fresh, chopped|
|½ teaspoon||Cayenne pepper|
|⅛ teaspoon||Hot red pepper sauce|
|1 cup||Tomatoes; peeled, seeded and chopped|
|1 \N||Lemon; cut into wedges|
Prep: 5 min, Cook: 20 min.
Heat oil in a heavy nonstick skillet over medium heat. Saut onions and garlic 3-4 minutes or until onion softens. Add fish and saut about 1 minute per side. Add remaining ingredients, except lemon. Season with salt and pepper to taste. Cover and simmer 7-8 minutes or until fish flakes easily. Serve fish with lemon wedges.
