|1½ pounds||Fatfree frozen shrimp; thawed|
|1 small||Red onion; sliced|
|¾ cup||+ 2 tablespoons fatfree Caesar salad; divided|
|10 cups||Romaine lettuce; cut in bitesize (10|
|1 cup||Cherry tomatoes; cut in half|
|1 cup||Artichoke hearts; chopped|
|1½ cup||Fatfree seasoned croutons; (2 oz.)|
|¾ cup||Fatfree Parmesan cheese; (3 oz.)|
Prepare a mediumhot grill. Lightly spray wire hinged grill basket with nonfat cooking spray or directly spray grill. Brush shrimp and onion slices lightly with Caesar dressing. Place shrimp and onion in grill basket. Cook 810 minutes, turning once, and brushing with additional dressing until shrimp are pink and firm. Combine lettuce, tomatoes, artichoke hearts, croutons, shrimp and onions in a large mixing bowl; sprinkle with Parmesan cheese and toss lightly. Gradually pour Caesar dressing over salad and toss until well mixed. Serves 6.
