Grilled salmon with creamy pesto^

Ingredients

2clovesGarlic, sliced
½cupFresh parsley, packed
½cupFresh basil leaves, packed
½cupLow or nonfat sour cream
3tablespoonsSkim milk
¼cupSoy sauce, divided
1tablespoonShredded Parmesan
2tablespoonsVegetable oil
2poundsSalmon fillets, cut in 6

Directions

Blend garlic, parsley and basil; add sour cream, milk, 1 tablespoon soy sauce,

and cheese. cover and process until smooth.

Mix remaining soy sauce and oil, brush on fish. Grill until fish flakes easily

with a fork.

Warm pesto; spoon on salmon.

Salmon may be broiled.
