Salmon and pesto pasta salad

Measure Ingredient
1 pounds Salmon cooked and flaked
6 ounces Pasta shells
1 pounds Cherry tomatoes
5 ounces Mange tout
\N \N Pesto dressing; (2 tablespoons light
\N \N ; olive oil mixed
\N \N ; with 1 tablespoon
\N \N ; white wine vinegar
\N \N ; and 1 tablespoon
\N \N ; pesto)

Cook and drain pasta shells according to instructions. Plunge mange tout in saucepan of boiling water for 1 minute, allow to cool. Halve cherry tomatoes. Dress salmon, pasta shells, cherry tomatoes and mange tout separately with pesto dressing. Begin layering by compacting salmon in the bottom of a round pyrex bowl. Follow with a layer of pasta shells. Then add tomatoes and lastly the mange tout. Cover with a large plate and leave in a cool place for at least an hour. Turn upside down onto a plate and serve.

NOTES : Perfect for a picnic - layer the salad into a bowl and cover with a plate - when you reach your picnic site just turn it upside down and serve.
