Grilled chicken with pepper sauce

Ingredients

4Chicken breast fillets
15gramsButter; melted (1/2oz)
2Fresh chillies; seeds removed
2largesRed peppers; cored and chopped
75gramsSundried tomatoes; (3oz)
2teaspoonsSoft light brown sugar
1tablespoonWhite wine vinegar
1227 gram can chopped tomatoes; (8oz)
Salt and freshly ground black pepper
1tablespoonFreshly chopped parsley

Directions

1. Brush the chicken breasts with melted butter and place under a preheated moderate grill for approximately 15 minutes turning occasionally.

2. Meanwhile, place the remaining ingredients in a food processor or blender and blend until smooth. Transfer to a saucepan.

3. Simmer the sauce for 3-4 minutes then pour over the cooked chicken breasts, and sprinkle with parsley.
