Gingerbread pancakes

Quantity Ingredient
1 cup Unbleached flour -- sifted
1 teaspoon Baking powder
1 teaspoon Baking soda
¼ cup Brown sugar -- packed
1 teaspoon Ginger
½ teaspoon Cinnamon
½ teaspoon Cloves
¼ teaspoon Salt
½ cup Skim milk --at room
Temperature
2 Egg whites -- whipped
½ tablespoon Molasses
½ cup Applesauce -- at room
Temperature

Prepare skillet with cooking spray and heat on medium until hot. In a mixing bowl, combine flour, baking powder, brown sugar, ginger, cinnamon, cloves, and salt . In another mixing bowl, combine milk, egg whites, molasses, and applesauce. Mix dry ingredients with wet ingredients just until moistened. Ladle in the batter, using 2 or more tablespoons per cake. Cook for 2 minutes, then flip carefully and cook for 2 minutes more.

Repeat with remaining batter.
