Ginger-lemon brew

Quantity | Ingredient | |

2 | cups | Unsweetened apple juice or water |
4 | \N | Thin slices fresh ginger |
1 | \N | Lemon, organic preferred |
2 | teaspoons | Honey (optional) |
In a medium-sized saucepan, heat the apple juice and ginger. Juice the lemon and add, with the rinds, to the juice mixture. Bring to a boil and simmer for 5 minutes.
Strain through a sieve into 2 mugs, and sweeten with honey, if desired.
