Garlic roast potatoes

900gramsPotatoes, large peeled
50millilitresOlive oil
120millilitresLemon juice freshly squeezed
2teaspoonsDried oregano
3Garlic cloves finely chopped
Salt & Pepper
120millilitresWater

Directions

Preheat oven to 230C. Cut potatoes into quarters or eights lengthwise, place in large shallow ovenproof dish.

Add remaining ingredients and stir potatoes to coat.

Bake at top of oven, uncovered for 1 hour or until golden, crip on the outside and soft inside.

Rearrange the potatoes and add more water during the cooking if necessary.
