Roasted garlic mashed potatoes

Yield: 6 Servings

Measure Ingredient
1 \N Head garlic; peeled
2 pounds Red potatoes; cleaned & quartered
½ cup Milk
2 ounces Butter
½ teaspoon Salt
½ teaspoon Freshly ground pepper
¼ cup Parmesan cheese

Heat oven to 350 degrees,coat garlic with a tablespoon of olive oil,place on cookie sheet. Roast 20-30 minutes till well browned and soft. Boil potatoes until tender,about 15 minutes,drain and place in mixer bowl, add remaining ingredients and mix till mashed and combined. Adjust seasoning.

Per serving: 186 Calories; 9g Fat (45% calories from fat); 5g Protein; 22g Car bohydrate; 26mg Cholesterol; 335mg Sodium NOTES : I like real food!,so I dont peel the potatoes. If you love garlic,use 2 heads!
