Garden lettuces w/radicchio

Yield: 4 Servings

Measure Ingredient
1 \N Head Limestone or Butter lettuce
1 \N Head Red Leaf lettuce
1 \N Head Radicchio
2 \N Ruby grapefruits; peeled and sectioned
1 tablespoon Grapefruit juice
1 tablespoon Balsamic vinegar
⅓ cup Light olive oil
\N \N Salt and pepper; to taste

VINAIGRETTE

1. Prepare and wash lettuces and radicchio, using the small inner leaves only.

2. Peel and section the grapefruit, saving the juice for the VINAIGRETTE.

3. Toss with VINAIGRETTE and garnish with grapefruit sections. Vinaigrette: Combine all ingredients and blend thoroughly.
