1 \N | Head Red Leaf lettuce |
1 \N | Head Radicchio |
2 \N | Ruby grapefruits; peeled and sectioned |
1 tablespoon | Grapefruit juice |
1 tablespoon | Balsamic vinegar |
⅓ cup | Light olive oil |
\N \N | Salt and pepper; to taste |
VINAIGRETTE
1. Prepare and wash lettuces and radicchio, using the small inner leaves only.
2. Peel and section the grapefruit, saving the juice for the VINAIGRETTE.
3. Toss with VINAIGRETTE and garnish with grapefruit sections. Vinaigrette: Combine all ingredients and blend thoroughly.
GREENS
LETTUCE, RADICCHIO, AND GRAPE-
