Fried rice with peppery curry

Ingredients

2tablespoonsOnions, chopped
1tablespoonGarlic, chopped
½cupGreen beans, chopped
1tablespoonCilantro leaves, chopepd
½cupCucumber, sliced
2tablespoonsPeppery curry paste, see recipe
5cupsCooked long-grain rice
2tablespoonsSoy sauce
3eachesGreen onions, sliced

Directions

GARNISH

Heat oil in a wok over medium-high heat. Add the onion & stir-fry for 3 minutes, then add the garlic & continue to stir-fry for a few minutes, until both are golden. Add the beans & curry paste & stir-fry for 3 minutes. Add the rice & soy sauce & stir-fry until hot through, be careful not to overcook. Serve with the garnishes.
