Fried rice with curried meatballs

Yield: 4 Servings

Measure Ingredient
1 cup Rice -- uncooked
½ pounds Ground pork
½ pounds Ground turkey
3 tablespoons Dry bread crumbs
5 teaspoons Curry powder -- divided
2 mediums Carrots -- halved & sliced
1 small Zucchini -- halved & sliced
2 mediums Garlic cloves -- minced
2 mediums Scallions -- cut in 1"
5 minutes.

Cook rice in boiling salted water, according to package directions until tender. Meanwhile, in a large bowl, combine ground pork and turkey, bread crumbs, 1 tsp curry powder and salt. In a large nonstick skillet, over medium-high heat, heat 1 Tbs oil. Add meatballs and brown well. Add carrots, cover and cook 5 minutes. Stir in zucchini, garlic and scallions and cook until tender, about 10 minutes. Push vegetables and meatballs to one side of pan.
