Fried rice with curried meatballs

| ½ | pounds | Ground pork |
| ½ | pounds | Ground turkey |
| 3 | tablespoons | Dry bread crumbs |
| 5 | teaspoons | Curry powder -- divided |
| 2 | mediums | Carrots -- halved & sliced |
| 1 | small | Zucchini -- halved & sliced |
| 2 | mediums | Garlic cloves -- minced |

Directions
Cook rice in boiling salted water, according to package directions until tender. Meanwhile, in a large bowl, combine ground pork and turkey, bread crumbs, 1 tsp curry powder and salt. In a large nonstick skillet, over medium-high heat, heat 1 Tbs oil. Add meatballs and brown well. Add carrots, cover and cook 5 minutes. Stir in zucchini, garlic and scallions and cook until tender, about 10 minutes. Push vegetables and meatballs to one side of pan.
