Fried noodles (chaau min)

Yield: 4 Servings

Measure Ingredient
1 pounds Thin egg noodles
\N \N Peanut oil for stir frying
1 tablespoon Ginger; minced
½ pounds Cooked meat - chicken; beef, pork, shrimp, or combination
2 cups Bean sprouts
¼ cup Green onions
2 tablespoons Soy sauce
1 tablespoon Sesame oil

1. Precook noodles.

2. Heat wok. Add peanut oil and ginger. Stir fry 1 minute until oil is aromatic.

3. Add meat, bean sprouts, and green onion. Stir fry 2 minutes.

4. Add noodles, soy sauce and sesame oil. Stir fry 3 minutes until heated through.
