Fried noodles (chaau min)

Ingredients

1poundsThin egg noodles
Peanut oil for stir frying
1tablespoonGinger; minced
½poundsCooked meat - chicken; beef, pork, shrimp, or combination
2cupsBean sprouts
¼cupGreen onions
2tablespoonsSoy sauce
1tablespoonSesame oil

Directions

1. Precook noodles.

2. Heat wok. Add peanut oil and ginger. Stir fry 1 minute until oil is aromatic.

3. Add meat, bean sprouts, and green onion. Stir fry 2 minutes.

4. Add noodles, soy sauce and sesame oil. Stir fry 3 minutes until heated through.
