Fresh tomato sauce (gardenburger)

Ingredients

1tablespoonOlive oil
½Yellow onion; diced
2Cloves garlic; minced
8Roma tomatoes; peeled, seeded and diced
¼teaspoonThyme
1tablespoonFresh basil leaf
½teaspoonBlack pepper
1Tiny pinch cinnamon; or to taste
½cupWhite wine

Directions

Heat oil in heavy sauce pan over medium heat. Saute onions and garlic until they are tender and fragrant. (Do not allow them to brown.) Add diced tomatoes, herbs, cinnamon and wine. Cover and adjust heat to allow mixture to simmer. Remove lid and allow sauce to reduce to proper consistency.

Season with sea salt and black pepper as desired.

Makes: About 2 cups.
