Fresh spinach slaw

Yield: 6 Servings

Measure Ingredient
1⅔ cup Pitted ripe olives
4 cups Shredded spinach
1 Thinly shredded carrot
½ cup Thinly sliced radishes
2 tablespoons Thinly sliced green onions
¼ cup Thinly sliced celery
1 cup Cottage cheese
2 tablespoons Salad oil
2 tablespoons Cider vinegar
1 teaspoon Salt
¼ teaspoon Dry mustard
1 dash Liquid red pepper seasoning

Quarter olives. Combine olives, spinach, carrot, radishes, onion, and celery. Blend remaining ingredients and toss with spinach mixture. Makes 6 servings.
