1⅔ cup | Pitted ripe olives |
4 cups | Shredded spinach |
1 \N | Thinly shredded carrot |
½ cup | Thinly sliced radishes |
2 tablespoons | Thinly sliced green onions |
¼ cup | Thinly sliced celery |
1 cup | Cottage cheese |
2 tablespoons | Salad oil |
2 tablespoons | Cider vinegar |
1 teaspoon | Salt |
¼ teaspoon | Dry mustard |
1 dash | Liquid red pepper seasoning |
Quarter olives. Combine olives, spinach, carrot, radishes, onion, and celery. Blend remaining ingredients and toss with spinach mixture. Makes 6 servings.
