Forrest's french-fried shrimp

Yield: 6 Servings

Measure Ingredient
2 pounds Unpeeled medium-size fresh p
1 cup All-purpose flour
1½ teaspoon Baking powder
½ teaspoon Salt
⅔ cup Water
3 tablespoons Lemon juice
1 tablespoon Vegetable oil
1 large Egg, lightly beaten
\N \N Vegetable oil

Peel shrimp, leaving tails intact; devein, if desired.

combine flour, baking powder, and salt in a medium bowl. Add water and next 3 ingredients; stir until smooth.

Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees.

Dip shrimp into batter, and fry, a few at a time, until golden. Drain on paper towels.
