Gulf coast fried shrimp

Measure Ingredient
2 pounds Unpeeled medium-size fresh shrimp
4 larges Eggs, beaten
⅔ cup Commercial spicy French salad dressing
1½ tablespoon Lemon juice
¾ teaspoon Onion powder
\N \N Vegetable oil
1⅓ cup Crushed saltine crackers
⅔ cup Crushed corn flakes cereal
⅓ cup White cornmeal

Peel shrimp, leaving tails intact; devein if desired. Place shrimp in a large shallow dish. Combine eggs and next 3 ingredients; pour over shrimp, stirring gently. Cover and marinate in refrigerator 3 hours, stirring occasionally.

Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees.

Combine cracker crumbs, cereal and cornmeal. Remove shrimp from marinade, discarding marinade. Dredge shrimp in cracker mixture, and fry, a few at a time, until golden. Drain.
