Fried butterfly shrimp

Ingredients

QuantityIngredient
2poundsLarge shrimp, cleaned, leaving tail intact
1cupSifted flour
½teaspoonSugar Pinch curry powder
1Egg
1cupUp water
2Rsp oil
½teaspoonSalt Oil for frying

Directions

Slit shrimp down back and spread apart butterfly fashion. Pull tail thru slit. Combine flour, sugar, and curry powder. Add egg, water, and 2 tsp oil; beat well. Dip shrimp in batter. Heat oil to 375 in deep skillet or deep fryer. Fry, a few at a time, until golden brown.

Drain on paper towels.
