Florentine meat foldovers

Ingredients

¼poundsPork sausage
1smallOnion
1eachClove garlic
10eachesSpinach, cook and drained
Salt and pepper to taste
6eachesTortillas
½cupOil
ounceTomato sauce
16cansTomatoes
1teaspoonItalian seasoning (or combo of basil, oregano etc)
1cupMozzarella cheese, shredded

Directions

Brown the hamburger and sausage with the onion and garlic. Drain excess fat off. Stir in the spinach and season with salt and pepper.

In medium skillet, heat tortilla shells in hot oil until softened but not crisp. Meanwhile, heat tomatoes, tomato sauce and italian seasoning. Put meat mixture in tortilla shells and roll up. Arrange in casserole dish, pour the tomato mixture over top. Sprinkle with cheese and bake in a 350F oven for about 30 minutes. Makes 6 servings.
