Fish and crab meat fritters

Ingredients

12ouncesFresh or frozen cod of flounder fillets, flaked
6ouncesImitation crab meat (or real if you wish), drain well if using canned crab
2Eggs; beaten
1//2 c flour
1Green onion; finely chopped
½teaspoonFinely shredded lemon peel
1teaspoonLemon juice
1Cloves garlic; crushed (up to 2)
¼teaspoonSalt
½teaspoonPepper
Cooking oil

Directions

In a blender container or food processor bowl, combine fish crab, eggs, flour, onion, lemon peel, lemon juice, garlic, salt and pepper. Cover and blend until smooth. Lightly oil skillet and heat. Spoon about ¼ cup batter onto skillet and spread to a patty 3 inches in diameter. Cook 3 minutes per side or until golden. Repeat with remaining batter.
