Fettuccine gorgonzola

Ingredients

| ¼ | cup | Butter or margarine |
| ½ | cup | Cherry tomato wedges |
| ½ | cup | Prosicutto or ham strips |
| 1 | Egg | |
| ¾ | cup | Crumbled Gorgonzola cheese |
| Or Parmesan | ||
| 2 | tablespoons | Light cream or milk |
| Salt and pepper -- to taste | ||
| 8 | ounces | Pkg |
| Noodles -- cooked/drained | ||
| 2 | tablespoons | Chopped parsley |
| Fettuccine or med egg | ||
Directions
In saucepan, cook shallots in butter until tender. Add tomato wedges and prosicutto. In a separate bowl, mix egg, cheese, cream or milk, salt, and pepper. Toss to blend and cook for just a minute. In hot serving dish, combine fettuccine and cheese mixture. Toss to blend. Serve immediately, garnished with parsley. I have substituted zucchini for the ham with good results and also added zucchini to the original.
