Fannie farmer granola-carrot cookies

Yield: 36 cookies

Measure Ingredient
6 tablespoons Butter, softened
¾ cup Brown sugar
1 Egg
1 teaspoon Vanilla
1½ cup Shredded raw carrots
¾ cup Flour
¼ cup Non-fat dry milk
½ teaspoon Baking soda
1 teaspoon Cinnamon
2 cups Granola

In a bowl, beat butter and brown sugar until blended. Add egg and vanilla, then shredded carrots. In second bowl, mix the flour, dry milk, baking soda, salt and cinnamon. Add to the butter mixture and stir in granola. Drop by rounded teaspoonfuls onto cookie sheets and bake about 10 minutes at 350'F., until edges are lightly brown.
