Elanor's sweet potato pie

Ingredients

| 3½ | cup | Sweet potatoes, cook/mash |
| ½ | cup | Butter, softened |
| 2 | cups | Sugar |
| 4 | eaches | Eggs |
| ½ | teaspoon | Salt |
| ½ | teaspoon | Nutmeg |
| 13 | ounces | Evaporated Milk |
| 2 | teaspoons | Lemon extract |
| 2 | eaches | Deep dish unbaked pie shells |
Directions
beating well. After each one, stir in salt, nutmeg, milk and extract. Pour into 2 deep dish unbaked, pie shells. Bake at 425 for 20 minutes. Then lower oven to 325 and bake for 30-40 minutes longer.
