Ingredients

1Skillet of chopped onions
2cansTomatoes
smallAmount of oil
18Hard boiled eggs
1canGreen chile peppers
Salt & pepper to taste
Grated cheese
smallAmount of bell pepper; chopped

Directions

Brown onions in oil; add bell pepper and then tomatoes. Cook until soft.

Season to taste with salt and pepper. Slice eggs. In a baking dish, put a layer of sauce; a layer of eggs. Altemate until dish is full. Cover with grated cheese and bake in a moderate oven. Serves 6.
