|1||Skillet of chopped onions|
|small||Amount of oil|
|18||Hard boiled eggs|
|1 can||Green chile peppers|
|Salt & pepper to taste|
|small||Amount of bell pepper; chopped|
Brown onions in oil; add bell pepper and then tomatoes. Cook until soft.
Season to taste with salt and pepper. Slice eggs. In a baking dish, put a layer of sauce; a layer of eggs. Altemate until dish is full. Cover with grated cheese and bake in a moderate oven. Serves 6.
