Eggs el rancho

Yield: 6 Servings

Measure Ingredient
1 \N Skillet of chopped onions
2 cans Tomatoes
\N small Amount of oil
18 \N Hard boiled eggs
1 can Green chile peppers
\N \N Salt & pepper to taste
\N \N Grated cheese
\N small Amount of bell pepper; chopped

Brown onions in oil; add bell pepper and then tomatoes. Cook until soft.

Season to taste with salt and pepper. Slice eggs. In a baking dish, put a layer of sauce; a layer of eggs. Altemate until dish is full. Cover with grated cheese and bake in a moderate oven. Serves 6.
