Ingredients

| 1 | Skillet of chopped onions | |
| 2 | cans | Tomatoes |
| small | Amount of oil | |
| 18 | Hard boiled eggs | |
| 1 | can | Green chile peppers |
| Salt & pepper to taste | ||
| Grated cheese | ||
| small | Amount of bell pepper; chopped | |
Directions
Brown onions in oil; add bell pepper and then tomatoes. Cook until soft.
Season to taste with salt and pepper. Slice eggs. In a baking dish, put a layer of sauce; a layer of eggs. Altemate until dish is full. Cover with grated cheese and bake in a moderate oven. Serves 6.
