Egerdouce sauce

Ingredients

| 2 | tablespoons | Olive oil |
| 3 | ounces | Onions, roughly chopped |
| 1 | ounce | Each of raisins & currants |
| ½ | teaspoon | Each salt, gournd ginger, |
| Mace & saffron | ||
| ¼ | teaspoon | Ground cloves |
| ½ | cup | Dry white wine |
| ⅓ | cup | Wine vinegar |
| 1 | ounce | Sugar |
| 3 | ounces | Wholemeal or wholewheat |
| Breadcrumbs | ||
| ⅓ | cup | Water |
Directions
Gently cook the onions in the oil till they are solft. Add the fruit & spices & cook for a few minutes. Melt the sugar in the wine & venegar & add this to the onion & fruits. Simmer all toghether, covered for 15 minutes then process. Reutrn the mixture tothe pan & add the breadcrumbs & enough water to make a thick but not claggy sauce.
Adjust the seasoning to taste & serve with the roast meat.
