Egerdouce sauce

Ingredients

2tablespoonsOlive oil
3ouncesOnions, roughly chopped
1ounceEach of raisins & currants
½teaspoonEach salt, gournd ginger,
Mace & saffron
¼teaspoonGround cloves
½cupDry white wine
cupWine vinegar
1ounceSugar
3ouncesWholemeal or wholewheat
Breadcrumbs
cupWater

Directions

Gently cook the onions in the oil till they are solft. Add the fruit & spices & cook for a few minutes. Melt the sugar in the wine & venegar & add this to the onion & fruits. Simmer all toghether, covered for 15 minutes then process. Reutrn the mixture tothe pan & add the breadcrumbs & enough water to make a thick but not claggy sauce.

Adjust the seasoning to taste & serve with the roast meat.
