Dry salami and mushroom bolognese

| 8 | ounces | Sliced Monterey Mushrooms |
| 4 | ounces | Sliced Dry Salami; (minced) |
| 1 | Yellow onion; (chopped) | |
| 3 | Cloves garlic; (minced) | |
| 1 | bunch | Italian parsley; (chopped) |
| 2 | tablespoons | Fresh oregano; (chopped) |
| ¼ | cup | Red wine |
| 2 | tablespoons | Olive oil |
| 2 | teaspoons | Salt |
| 2 | tablespoons | Black pepper |
| ¼ | teaspoon | Dried crushed red chilies |
| 1 | can | (12 Oz.) crushed tomatoes |
Directions
In a blender place mushrooms, salami and next four ingredients. Blend till finely chopped. Heat oil in large sauté pan and add mushroom mixture. Sauté for 5 minutes or until liquids are gone. Deglaze pan with red wine and reduce out. Add remaining ingredients; cook for 10 minutes. Pour over your favorite pasta and enjoy.
