Double almond butter cookies

Yield: 96 Servings

Measure Ingredient
2 cups Softened butter
2½ cup Powdered sugar; sifted, divided
4 cups Flour
2¼ teaspoon Vanilla; divided
⅔ cup Almond paste
¼ cup Firmly packed light brown sugar
\N \N =AB c chopped almonds; toasted

Beat butter with 1 cup powdered sugar Gradually beat in flour. Bet in 2 tsp vanilla. Cover and chill dough 30 minutes. Combine almond paste, brown sugar almonds and remaining ¼ tsp vanilla. Shape dough around =AB ts almond paste mixture, completely enclosing almond paste center and forming 1-inch balls. Place on ungreased baking pans. Bake in preheated 350 F oven 15 minutes. Cool. Roll cookies in remaining 1-½ c powdered sugar or sift powdered sugar over cookies.
